
Aubergine Katsu with Rice Noodles

INGREDIENTS
1 Good Its Gluten Free Katsu Curry Kit
1 Aubergine
Chillies
Spring onion
Rice noodles
METHOD
Slice the aubergine into 1cm discs. Cover both sides with a good amount of salt and leave for 25 minutes. This is to improve taste and texture of the aubergine. Whilst waiting, slice chilies and spring onion. Then rinse aubergine with water to remove salt and pat dry.
Coat aubergine in batter and then cover in panko. Shallow fry until breadcrumbs are evenly brown and the aubergine is tender in the middle. You can leave in oven to keep warm; this will help to evenly cook. Bring the rice noodles to boil for 3-4 minutes (or as directed on pack) and drain, ready to serve.
Microwave sauce for 2-3 minutes.
