INGREDIENTS
1 Good It’s Gluten Free Peri-Peri Pitta Kit
500g Skin On Chicken Thighs or Plant Based Alternative
2 Tomatoes
1/4 Cucumber
1 Red Onion
Crispy Lettuce
METHOD
Preheat the oven to 180c. Place the thighs into a ovenproof dish, coat with 1 tsp of oil and evenly cover with the dry spice mix. Bake for 45 minutes, until cooked through, with a crispy skin
Slice the cucumber, tomato, red onion and crispy lettuce, ready to fill the pitta.
Toast the pitta: Place in a toaster on medium heat for 1 - 2 minutes.
