
Salt & Pepper Chicken Lettuce Wraps

INGREDIENTS
1 Good It’s Gluten Free Chinese Salt & Pepper Meal Kit
450g skinless chicken breasts, cut into 1-inch dice
Romaine lettuce leaves
Good It’s Gluten Free Hoisin Sauce
METHOD
Combine the batter mix from the kit with 10 tablespoons water. Whisk until smooth. Pour the panko breadcrumbs onto a plate or in a shallow bowl. Coat the chicken in batter, then roll in the breadcrumbs.
Add enough oil in a large skillet to come up ¼ inch. Heat over medium-high heat until it begins to simmer. Cook for 6-8 minutes, turning the pieces occasionally until golden brown and cooked through.
Sprinkle with the salt and pepper mix from the meal kit.
Serve in lettuce leaves drizzled with hoisin sauce and extra hoisin sauce on the side.
